Rooftop Bar Installation at The Chesterfield Mayfair Hotel
Servaclean was commissioned to deliver a bar system for the striking new rooftop bar Stanley’s, at The Chesterfield Mayfair Hotel. Located high above London’s Mayfair, the project presented the unique logistical and structural challenges associated with rooftop installations, requiring close coordination between all parties to ensure a successful outcome.
The venue forms part of Red Carnation Hotels’ latest investment at The Chesterfield Mayfair, introducing a rooftop bar that pays tribute to the group’s founder, Stanley Tollman. With expansive views across the capital and a fully retractable roof, Stanley’s has been designed to offer a refined cocktail and dining experience for both hotel guests and non-residents.
Designing for a Rooftop Environment
Perched among the chimneys of central London, the rooftop location demanded a carefully considered bar solution that balanced structural integrity with visual impact.
Servaclean’s scope included the design and manufacture of a fully structural bar system. This system was engineered to support a backlit marble countertop and bar front, while maintaining the highest standards of hygiene, durability and functionality.
The stainless steel sub-counter was configured to support efficient service and included:
- A dedicated BBQ grill position
- PREPSink paired with an ICEChest
- Drinks dispense tray for streamlined cocktail preparation
- British-made glass froster unit
The result is a visually striking bar that performs seamlessly during service, combining practicality with a premium finish suited to one of London’s most desirable locations.
The bar counter was installed in June 2025, followed by refrigeration equipment and the drinks dispense tray in July 2025. Stanley’s officially opened in October 2025, welcoming guests to the new rooftop space.
Collaborative Project Delivery
The project was overseen by Servaclean Project Manager Adam Turnbull. Close coordination between the client team, contractors and consultants played a key role in the successful delivery of the rooftop installation.
- Suzie Norris and Adam Lake from The Chesterfield Mayfair Hotel represented the client team.
- Rommel Layco worked alongside the project from Red Carnation Hotels (UK) Ltd head office.
- Piperhill Construction Ltd, led by Gerard McKeever and Gerard McGuigan, acted as main contractor.
- Northlight Architects, with Gebina Ham, provided architectural support for the scheme.
This collaborative approach ensured the bar system was seamlessly integrated into the rooftop environment and aligned with the overall vision for Stanley’s.
A Standout Addition to Mayfair’s Rooftop Scene
As reported by Boutique Hotelier, Stanley’s is a significant new addition to The Chesterfield Mayfair. It celebrates the legacy of Red Carnation Hotels’ founder while reinforcing the group’s commitment to thoughtful investment and exceptional guest experiences.
With capacity for up to 60 guests, panoramic views of London and a carefully curated food and cocktail offering, the rooftop bar plays a central role in the venue’s appeal. Servaclean’s bar solution provides the operational backbone for this experience, delivering a hygienic, efficient and visually impactful bar designed to perform at the highest level.
“The red carnation was my father’s signature flower – a simple yet powerful symbol of warmth, generosity and genuine care. Stanley’s is a tribute to that spirit – a place where every guest feels personally looked after and truly at home. It embodies the heart of who we are as a family and as a brand: creating spaces filled with character, comfort and connection, where every detail reflects a deep love of hospitality.” – Vicki Tollman, president of Red Carnation Hotels
